Apple Bran Muffins

My kids grew up on these delicious muffins. Freezer to lunchbox - a hassle free snack.

Ingredients
  

Dry Ingredients
  • 1 cup Brown Sugar
  • 2 1/2 cups Rolled Oats
  • 1/2 teaspoon Salt
  • 1 1/2 cups Bran
  • 1 1/2 teaspoon Baking Soda
Wet Ingredients
  • 1/2 cup Golden Syrup
  • 2 tablespoons White Vinegar
  • 2 cups Milk
  • 1 cup Boiling Water
  • 2 Eggs
Fruit
  • 1 cup Apple Chopped or stewed

Method
 

  1. Preheat oven to 220°C
  2. Mix wet ingredients
  3. Mix dry ingredients
  4. Add the two mixes together along with the eggs and stir until well blended
  5. Add fruit and mix well
  6. Bake for 10-12 minutes
  7. When cooked a muffin should spring back when poked
