Apple Steak Sauce

Try this as a Chicken Marinade or as a dipping sauce with hot chips or gems

Ingredients
  

  • 1.8 kg Granny Smith Apples Peel on, cored and quartered
  • 1 kg Sugar
  • 6 teaspoons Salt
  • 8 teaspoons Ground Cloves (One 40g packet)
  • 1 medium Onion Diced finely
  • 3-4 cloves Garlic Diced
  • 1 teaspoon Ground Ginger
  • 1.5 litres Malt Vinegar (Two 750ml DYC bottles)
  • 1 teaspoon Cayenne (heaped)

Method
 

  1. Core Apples (Do not peel) and dice onion and garlic.
  2. Place all ingredients in a pot and bring to the boil.
  3. Simmer for two hours.
  4. Allow to cool and whizz in the blender or using a stick blender.
  5. Return to heat and simmer a further two hours.
  6. Bottle in clean sterilised jars.
