Bread and Butter Pickles

Ingredients
  

  • 15 cups Cucumbers Sliced 1cm thick
  • 3 Onions Thinly sliced
  • 1/4 cup Salt
  • 5 cups Ice
  • 2 1/2 cups Apple Cider Vinegar
  • 2 1/2 cups Sugar
  • 1 teaspoon Turmeric
  • 1/2 teaspoon Celery Seeds
  • 1 heaped teaspoon Mustard Seed

Method
 

  1. Combine cucumbers, onions, salt and ice in a large bowl. Mix well
  2. Stand for three hours
  3. Rinse and drain
  4. Combine vinegar, sugar and spices in a large pot.
  5. Add cucumber/onion mix
  6. Place on low heat, bring up to almost boiling point but DO NOT boil
  7. Remove from heat
  8. Seal in sterile jars
