Chutney vs Relish
Chutney is cooked for 1-4 hours slowly.  Relish is cooked for a shorter period, is chunkier and has a sharper flavour.
Hints and tips for a good Chutney or Relish - Use good quality vinegar - at least 5% acetic acid.
Do NOT boil vinegar longer than necessary as acetic acid evaporated and will weaken the solution
