Feijoa Steak Sauce

 

Feijoa Steak Sauce

Ingredients
  

  • 1.6 kgs Feijoas
  • 1.3 kgs Sugar
  • 6 teaspoons Salt
  • 1 teaspoon Cayenne
  • 8 teaspoons Ground Cloves (one 40g packet)
  • 1 teaspoon Ground Ginger
  • 1.5 litres Malt Vingar (two 750 ml DYC bottles)

Method
 

  1. Top and tail the Feijoas (Do NOT peel). Cut into 2cm chunks.
  2. Peel and chop onion
  3. Add all ingredients into a large pot and heat until boiling. Reduce to a simmer (without the lid on the pot) for 2 hours.
  4. Allow to cool and puree with a stick blender.
  5. Return to simmer until desired consistency.
  6. Bottle in clean sterilised bottles.
