Method
- Melt butter and oil and sauté the onion for 5 minutes
- Add garlic and sauté 1 minute
- Add Ham Hock (Bacon) and stir
- Add half the collards and 2 cups of water
- Cook over medium heat stirring occasionally 10 mins
- Add remaining collards and 8 cups of water, bring to boil
- Reduce heat and simmer 2 hours
- Stir in Jalapenos
- Add salt and pepper
- Serve with pepper sauce
