My favourite goto recipe for tasty Collard Greens

Ingredients
  

  • 2 tbsp butter
  • 3 tbsp olive oil
  • 1 onion (diced_
  • 3 cloves Garlic (minced)
  • 1 Ham Hock (or Bacon)
  • kg Collards (Washed and cut into strips)
  • ¼ cup Jalapeno Pepper
  • Salt and Pepper to taste

Method
 

  1. Melt butter and oil and sauté the onion for 5 minutes
  2. Add garlic and sauté 1 minute
  3. Add Ham Hock (Bacon) and stir
  4. Add half the collards and 2 cups of water
  5. Cook over medium heat stirring occasionally 10 mins
  6. Add remaining collards and 8 cups of water, bring to boil
  7. Reduce heat and simmer 2 hours
  8. Stir in Jalapenos
  9. Add salt and pepper
  10. Serve with pepper sauce
