Rhubarb Champagne

Course: Drinks

Ingredients
  

  • 2 kg Rhubarb Chopped into 2-3cm chunks
  • 1.5 kg Sugar
  • 3 tablespoons white wine vinegar
  • 10 litres Water
  • 4 Lemons Juice and grated rind

Method
 

  1. Place all ingredients in a large container, cover and leave in a cool spot for at least 48 hours
  2. Strain
  3. Bottle and Leave for at least one week prior to drinking
