Courgette Pickle

Servings: 3 500g jars

Ingredients
  

  • 1 large Onion
  • 12-16 small Courgettes
  • 1/4 cup Salt
  • 2 cups Vinegar white or cider
  • 1 cup Sugar
  • 1 teaspoon Turmeric
  • 1 teaspoon Mustard Seeds more or less to taste
  • 1 teaspoon Celery Seeds

Method
 

  1. Slice courgettes and onions finely and place in a bowl with salt
  2. Cover and leave overnigh
  3. Drain the vegetables
  4. Bring rest of ingredients to boil then add vegetables and cook for 15 minutes
  5. Pack into jars, cover with vinegar mix and seal.
