Masked Potato Flakes

Ingredients
  

  • Potatoes
  • Water

Equipment

  • Dehydrator

Method
 

  1. Peel potatoes. (Leaving the skin on could make your flakes bitter)
  2. Boil potatoes with enough water to cover them. NO ADDITIVES eg salt, pepper or herbs
  3. Mash or blend using the water they were boiled in
  4. Spread on dehydrator leather trays in a thin layer and dehydrate at 60 degrees
  5. Potatoes are finished when they break instead of bending
  6. Break up in blender
  7. Seal in airtight container

Notes

To Use

Bring 2/3 c water and 1 tablespoon butter to the boil.
Turn off heat and add 1/4 c milk and 2/3 cup flakes
Add more butter, milk, or seasonings as required.
