Ingredients
  

  • 2 kg Navy Beans
  • 5 litres Tomato Juice
  • 4-5 Onions Finely diced
  • 6-8 Garlic Cloves Finely diced
  • cup Raw Sugar
  • 1 ½ tsp Ground Cinnamon
  • 1-2 tbsp Salt

Method
 

Pre-cook Beans
  1. Soak Beans 8-12 hours until soft (Note - this took over 24 hours here as our water is particularly hard). Drain
  2. Place in pot of water. Simmer - skimming foam off regularly. Cook on low, covered 1-1.15 hours till tender. Drain
Make Sauce
  1. Combine juice, onion, garlic, salt, sugar and cinnamon in a large pot
  2. Bring to boil, stirring occasionally to blend
  3. Fill hot sterile jars ⅓ to ½ full with Navy Beans
  4. Ladle over hot sauce, leaving 1" head space
  5. Remove bubbles, top up sauce if necessary. Wipe rim of jar. Add lid
  6. Can at 10 lbs for a weighted gauge, 11 lbs for a dial gauge. 65 minutes for Pints, 75 minutes for quarts

Notes

Soaking and Precooking the beans will take out the complex sugars that cause gas.
Onion Powder or Garlic Powder can be substituted for fresh.
