Herefordshire Sauce

...it's like Worcestershire Sauce...

Ingredients
  

  • 1.5 kg Green Apples Quartered (not peeled or cored)
  • 1 Onion Medium sized
  • 4 cloves Garlic
  • 600 grams Sugar
  • 16 cups Malt Vinegar
  • 1 kg Treacle (one tin)
  • 3 tsp Pepper
  • 6 tsp Salt

Method
 

  1. Place all ingredients in a large pot and bring to boil
  2. Boil for 1 ½ hours
  3. Cool and whizz with stick blender
  4. Strain through muslin for an extra fine sauce
  5. Bring back to boil and bottle hot sauce in hot sterile jars
